At About Thyme we are all about FRESH and even when we make freezer meals we use only freshest ingredients. When I get home after a long hard day and “What’s for Supper Mom” is my welcome greeting, all I want is to make it A 20-minute wonder. TASTY, FILLING, HEALTHY AND most of all QUICK. And suddenly my freezer is my favourite kitchen appliance.

You may say that freezer meals do not taste the same as Fresh but I have become a serious fan of good home cooked tasty freezer meals for those busy “I am just not in the mood to cook”nights So, lets me share a sauce that makes supper a DREAM. It is versatile You make a batch and freeze it in 3 parts. This same sauce can be used for pasta, enchiladas, Pizza’s, tomato bredie, Bolognaise and so much more

Here is to 10 recipes that will make a quick tasty supper and all using your Pomodoro sauce

Ingredients

  • 5 cans Whole peeled tomatoes in puree
  • 5 cloves garlic finely chopped
  • 2 medium yellow onions, finely chopped (about 2-1/4 cups)
  • 3 tablespoons oil
  • 1/8 teaspoon red pepper flakes
  • 5-6 basil leaves
  • 1/2 teaspoon salt to taste
  • pepper to taste
  • 3 tsp sugar

Instructions

Heat a large pot over medium-high heat. When hot, add the oil and the onions at the same time. Sauté until very soft, about 10 minutes. Add the garlic and sauté until fragrant, 1 to 2 minutes, but do not let it brown (turn down the heat if you see browning). Add the tomatoes, Sugar, Chilli Flakes and bring to a boil over high heat, stirring occasionally. Lower the heat to a simmer and cook, uncovered, for 20 minutes. Add the basil and cook for 5 minutes more. Remove the pot from the heat and season with the salt and pepper. Using an immersion blender, purée until mostly smooth Cool sauce down and divide into 5 portions and freeze.
